Extraction of Inulin from the Tubers of Jerusalem Artichoke and an Analysis of its Sorption Characteristics

Abstract


The object of the study is the content of the polysaccharide inulin in the tubers of the plant Jerusalem artichoke (Helianthus tuberosus L.) cultivated in Bulgaria. An extraction of the biopolymer has been made with the use of our own simple method which helps the obtaining of a relatively high amount and purity of the final product. A physicochemical characterization of the inulin preparations has been made. Their equilibrium sorption isotherms have been obtained experimentally. The analysis has been conducted with the static gravimetric method at temperatures of 10°C, 25°C and 40°C and relative air moisture between 0.11 and 0.90. It has been established that the sorption capacity of inulin decreases with the increase in temperature at constant water activity. It has been proved that the empirical model of Chung-Pfost describes the sorption isotherms relatively well. Finally the BET-monomolecular moisture contents of the analyzed product have been determined
